Sum Sum Summertime

When I was young we had horses. Some of my favorite memories are going to the horse lot with my daddy. Since I lost him at the young age of 11, they are very special memories to me. He spent a lot of time there and many days I went with him to feed in the afternoons. Another favorite memory was when we stopped at the corner store on the way home for a sussy. A sussy was my mom's name for a surprise. My choices were always a Chick O Stick, a Bit O Honey or a Push Up. I loved them all but I especially remember the colorful paper wrapper on the Push Up and getting to the bottom of the sherbet treat and sucking out the last drop.

So this week's post from A Beautiful Mess made me happy. So happy I could taste it. It seems a little funny to me that these young girls remember Creamcicles. Because I think only being a child of the 60's would you favorite these. I guess it goes to show you some things never get old.

So get busy and make some and remember the days in your bermuda shorts and bare feet, riding your bike til the sun went down.



Orange Creamsicles

make 8 standard size popsicles (may vary based on your mold size).
4-5 oranges (8 oz. orange juice)
2 1/2 cups vanilla ice cream
1 tablespoon orange zest
1 cup heavy whipping cream
First extract the juice from the oranges. If you're too busy and important to stand around juicing oranges, you can use store bought orange juice.

Blend together the orange juice, ice cream and zest until smooth. Pour into popsicle molds, but leave the top 1/4 empty. Using a whisk, or a stand mixer with a whisk attachement whip the heavy whipping cream until soft peaks form. You don't want firm whipped cream, just firm enough that it won't too quickly seep into another liquid. Spoon the whipped cream on top of the creamsicles, add popsicle sticks and freeze overnight.
