Worming my way around Lenten restrictions...

My husband is an observer of Catholic holidays. I am not. But, like the Vegetarian thing in Pulp Fiction (where Samuel Jackson's girlfriend is a vegetarian, so that pretty much makes him a vegetarian), I get sucked into whatever "holidays" my husband is required to observe.

Like Lent.

This year, my husband has decided that we will be avoiding fried foods for Lent. ...But what if I want something crunchy???

So I thought of a solution...

Panko-Crusted Baked Tilapia!

  • 2-4 tilapia filets
  • 1/2 cup panko breadcrumbs
  • zest and juice from 1 lemon
  • 1/2 tsp dried tarragon
  • 2-3 tsp butter, melted
  • salt
  • pepper
  • oil or nonstick spray

  1. Preheat oven to 375.
  2. Spray nonstick spray on, or oil a baking sheet or pan.
  3. Salt and pepper the fish and place it in the pan.
  4. Mix together the breadcrumbs, tarragon, lemon juice and zest, salt and pepper, and melted butter.
  5. Divide the breadcrumbs over the tops of the fish filets, and press to adhere.
  6. Bake for 15 minutes at 375.
  7. Broil for 5 minutes, or until browned on top.
  8. It's done! Enjoy the krronch!
